Simple but Delicious Pork Chops

Hello! So, I have a wonderful  and very simple recipe for Pork Chops to share with you. I know, I know, Pork Chops can be tough and dry. But I am telling you, these will be tender and juicy and Ah-mazing! This recipe is one that you can put in the crockpot and let it cook on low all day while you’re out and about. You also could put it in a dutch oven and let it roast slowly for a couple hours in the late afternoon. It is my husband’s Grandma’s recipe, and his mom taught it to me about a year ago (haha! That sounded more complicated than if I had just said,”It’s my GrannyZola-in-Law’s recipe). I digress. It has become a favorite around here for me because it is cheap,easy, and delicious! It also seems to be a crowd pleaser- Scott loves it and all three of my kids (7,5,and 1) love it too!  I just made it for dinner last night so I could take pictures along the way to have to show you. Seriously, it is so simple and so delicious!  You can serve it with your favorite simple sides such as a salad and mashed potatoes. For this meal, I served polenta and green beans with ours.

Without further ado, I give you

Granny Z’s Tomato Pork Chops

You will need:

  • IMG_23396 boneless or boned porkchops(whichever you prefer- I’ve tried it either way, and it’s delicious all the same)
  • 1 Oni0n (yellow or white- whichever is your favorite to cook with in casseroles)
  • 2- regular size cans of tomato soup or 1 large  (34floz)can of Tomato Soup- (Granny’s recipe uses Campbell’s Tomato soup, but I often prefer to use Pacific Organic Red Pepper and Tomato soup because it’s my favorite tomato soup. Either will work.)
  • Salt and Pepper to taste
  • A crock pot (which I used here) OR a *dutch oven

*If you decide to use a dutch oven, then preheat the oven to 325F. Know that you’ll cook it for 2 hours, so plan ahead on that one.)

Step 1:

Slice your onion as if you were going to layer them on a hamburger. I don’t know the official term for it.I am not a professional chef, as you may have guessed, so my official cooking lingo may be a bit wonky (Is that even a word? hmm…note to self: learn impressive cooking lingo and better adjectives). AND now you know why I took pictures, so I can say, “Cut it like this.”

Step 2:

Heat some olive oil in a pan and slightly brown the onions.

(This step is optional, but I do recommend it, because it makes the onions taste amazing and it also makes your house smell really impressive. When people come over, they will ask, “mmmm! What are you cooking? It smells delicious!” Either that, or they will think that someone has bad BO and needs a shower. I guess it depends on their opinion of the smell of sautéing onions.)

Step 3:

Layer the onions in the bottom of your crockpot or dutch oven. I’ll spare you my chatty wit and just put a picture on this one

Step 4:

Layer the pork chops on top of the onions. Sprinkle with a desired amount of salt and cracked pepper.

Step 5:

Pour all of the tomato soup on top of the pork chops, and put the lid on your crockpot.

 

Step 6:

Set the crockpot to a low heat setting, and let it cook for about 4- 6 hours. Or if you use a dutch oven, put it in the oven for 2 hours at 325F.

Feel free to do a happy dance at this point because you’re done! That is seriously it! Happy jig, happy jig!

Step 7:

This is what it looks like when it has been cooking for 6 hours. I know it doesn’t look like much, but trust me…

Oh, and I made polenta and green beans to go with it. Feel free to put whatever you want with your pork chops- obviously.

Step 8:

Plate your meal. The onions are really yummy if you like to eat onions, so feel free to put the cooked onions on top for your presentation. Don’t eat the onions if you don’t like onions. It’s your food, so I’m not going to judge how you eat it. As an extra bonus, you can wisk or stir up the soupy “gravy” that’s remaining and put it into a gravy boat or container to serve so that people can put extra on top of their meat if they want. It’s delicious enough that you may find your family and friends putting it on their rice or potatoes. They also might dip bread in it. Don’t be surprised if they start licking their plates when they’re done or even start drinking it out of the gravy boat. It’s that delicious. Okay, maybe not that delicious, but it is an excellent “gravy” sauce.
